Description of the Electric Smoker - 230 V - 2 tiers - L 715 mm - 04FM4
This 2-tier smoker is ideal for smoking fish (salmon, trout, eel, etc.), meat (duck breast, tenderloin, etc.), or shellfish (lobster, langoustine, scallops, etc.) at a very economical cost. This ham smoker can be used on one level for smoking whole bone-in hams or on both levels for smoking fish and charcuterie.
Proper smoking, as practiced by professionals, involves three steps : salting, drying, and smoking. This last step is done cold to eliminate free water without drying out or forming a crust on the product.
Cold smoking involves exposing food to cold smoke; the food is smoked, not cooked. The sawdust burns in the smoker, producing smoke through slow combustion, and is cooled within the appliance for even smoking . The temperature inside the smoker must not exceed 32°C (25°C for salmon) to prevent the food from cooking.
The 2-tier electric smoker contains a heating pin with a timer allowing for automatic ignition and combustion of the sawdust.
It comes with a refill of premium quality oak sawdust, essential for achieving that unique taste and flavor.
