The Groen TD/FPC electric 40 quart countertop braising pan has a manual tilt and can be considered one of the best braising line on the market today. The TD/FPC delivers versatility and durability this ergonomic braising pan can be used to braise, roast, fry, boil, simmer, sautee, steam, thaw, warm, proof, hold and serve! The Groen TD/FPC has a 3" radius corner compared to it's competitors 1" and 1/2" radius so food doesn't get trapped. The Groen Eclipse TDC/FPC reaches 350 degrees in just four minutes with heat evenly distributed across the surface so there are no hot or cold spots, only rapid, reliable cooking. The tilting mechanism goes past vertical so that you can easily clean the unit as well as emptying any product that may be in there.
The Classic, Advanced and Cook2Temp electronic controls on our braising pans reduce temperature variation to improve food quality and consistency while reducing labor and food costs. The Advanced and Cook2Temp controls have a digital timer and temperature pre-sets that allow commercial kitchen equipment operators to deliver consistent, repeatable results from chef to chef and shift to shift. Both have an IPX6 water-wash-down rated control panel that minimizes repair bills. The Cook2Temp controls have a core cooking probe for cooking product to a desired temperature, as well as a programmable step cooking option. Pre-program key cooking steps for up to 9 recipes, 4 steps per recipe, with audible and/or display alarms.
Our braising pans feature 3″-radius coved corners — the widest in the industry — allowing operators to easily move food product inside the pan without etching the inner sidewalls. This eliminates troublesome cleaning spots and corner food buildup often found in braising pans from other kitchen equipment manufacturers. An ergonomic design positions everything in view, and IPX6 water-was-down rated control housing protects the electronics from humidity and spray downs during the nightly cleaning of kitchen equipment, which increases reliability and food safety.
