  The oven's frame and interior are made of stainless steel, and the interior features coved corners to prevent food particle build-up. Each of the compartments features removable stainless steel pan slides and 3 wire grids so that overall, the unit accommodates up to (16) 18" x 26" pans. The body of the oven is made of a durable aluminum and is fully insulated. For your convenience, the doors come outfitted with silicone gaskets for a tight seal and with high temperature, ceramic, magnetic latches that are easy to open, but provide a secure closure. Plus, these latches are antimicrobial, which helps to fortify your kitchen environment against germs.
  
  To make installation and transportation easy, this cook and hold oven comes with 4 heavy-duty 5" casters to enable mobility and a field reversible doors for versatility.
