This is a very useful instrument during the vacuum cooking phases, because it allows the precise and punctual measurement of temperature directly at the heart of products.
The temperature is in fact measured by means of an extra-fine needle to be then visualized on a digital display. It can be also equipped with an antitheft protective shell.
In order to keep the package airtight during the phase of insertion and extraction of the needle probe, there are several neoprene adhesives, a gummy material which, besides resisting to hot temperatures, prevents the air re-entry thanks to its insulating properties.
