This thermostatically controlled Mirror hi speed clam griddle is ideal for fast food operators, mobile trailers and other high volume caterers. The clam top opens automatically at the end of the coooking time and adjusts to the thickness of the product being cooked. The hard chromed plate finish is non porpus so prevents cross flavour, reduces heat radiation so reducing fuel costs, has even heat distribution and is easy to clean down.
These Hi Speed Clam griddles can reduce cooking times by uptp 60%, keeps product more moist at juices are not lost, allows a higher output from a smaller footprint. The Clam automatically adjusts to the thickness of the product being cooked and automatically opens opens at the end of the cooking time - so reducing operator downtime. Griddles are supplied with smooth top and bottom plates as standard, but can be supplied with ribbed plates on request.
